Creating a non-alcoholic aperitivo that satisfies refined palates - including traditional spirit drinkers who demand bold, bitter profiles - requires precise flavor architecture. Without the warmth and carrier properties of alcohol, how do you achieve depth, body, and length?

We began with citrus, the undisputed heart of Italian aperitivo culture, centering our profile around grapefruit. Visually vibrant and crisp on the palate, grapefruit provides an energetic opening. Next come notes of bitter orange and a curated blend of bitter herbs that deliver that signature Italian amaro structure.

The real intrigue lies in our spice selection: Timut pepper and Sichuan pepper. This pairing creates a delicate, tingling warmth on the finish - frequently mistaken for ginger, an ingredient we deliberately omitted due to its polarizing nature. Finally, a hint of vanilla rounds out the blend, softening the herbs without adding excess sweetness.
